A Plant Powered Diet

It is a myth that someone following a plant-based diet cannot consume enough protein. The Mayo Clinic outlines a few suggestions for maintaining essential nutrients while eating plant-based. High protein options for plant-based eaters include tofu, tempeh, nuts, beans, seeds, and legumes. To consume enough calcium and vitamin D try a fortified nut milk including almond or soy milk. To swap fish for an omega 3 rich plant-based food, try flaxseed, chia seeds or walnuts in smoothies, salads, and oatmeal.

Here is an example of a plant-based day full of meals to try:

  • Breakfast: Oatmeal topped with pumpkin seeds, sliced almonds, berries, and/or banana
  • Lunch: Whole wheat wrap with hummus, plant-based protein, spinach, lettuce, tomato, onion, pepper, cucumber, pickles, etc.
  • Dinner: Tofu stir fry with peppers, carrots, green beans, and glazed tofu over brown rice
  • Snack: Veggies and crackers with hummus, apples with peanut butter, or a small bag of trail mix with nuts, seeds, and dried fruit.
  • Dessert: Fruit sorbet, no bake oatmeal peanut butter cookies, or a cup of fresh fruit

Each week, we are sharing a financial wellness tip to help you make the connection between financial management decisions, your overall wellness, and student success. Money touches every aspect of our lives, and a lack of financial literacy can cause unnecessary stress and negatively impact our mental and physical health.

Know What You Owe

Understanding your student loan debt is an important step toward maintaining your financial health and wellness. It may be overwhelming to think about the impact that borrowing can have on your future financial well-being. The Financial Literacy team is here to help you make sense of your loans and understand your repayment options.

Join the Financial Literacy team for the final Money Mondays session of the semester, Got Loans? Know What You Owe!, to learn how much you owe in federal loans and complete your required student loan exit counseling (if applicable). This session will be held on April 11 from 11 a.m.-12 p.m. in the Student Alumni Union 1829 Room.
