In a fun application of imaging, the Center for Imaging Science implemented UC Davis's Augmented Reality Sandbox. This makes use of a powerful distance measuring camera you might already have in your home: an Xbox Kinect! Using the depth measurements from the camera above a sandbox, a topological map of the sand can be made and projected back onto the sand. Here, you can move and play with the sand, watching it update in real time!
