History Lesson:
Pad Thai: Pad Thai originated in China and is mostly made of Chinese ingredients, like stir-fried noodles. Plaek Pibulsonggram, the late Thai prime minister, introduced it to his people in the 1930s and 1940s as a way to Westernize and modernize the country, along with other reforms. Pad Thai differentiates in that it has pounded dried chilies.
